veggie sticks with avocado-lime dip

Adapted from the People – Country magazine, September 2009.

Ingredients

2 firm, ripe avocados, pitted and peeled

1 cup plain, fat-free yogurt, drained

1/4 cup fresh lime juice

2 tablespoons loosely packed fresh mint leaves

2 cloves garlic, peeled

1 teaspoon kosher salt

36 (6 in.) wooden skewers

Fresh vegetables (carrots, broccoli florets, sugar snap peas, cherry tomatoes,zucchini and yellow squash, cut into bite-size pieces and chilled)

Preparation

Process avocado and next five ingredients until smooth, stopping to scrape down sides as needed; spoon into serving bowl.  Cover; chill one hour.

Thread chilled vegetables alternately onto skewers.  Serve with avocado dip.
