Ingredients
2 slices whole wheat bread, crusts removed
1/2 cup tomato puree
1 cup grated carrot
1/4 cup grated green pepper
1/2 cup zucchini
2 pounds ground beef chuck
1 egg
1 teaspoon salt
freshly ground black pepper
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1 medium onion, sliced
1 bay leaf
2 tablespoons all-purpose flour
Worchestershire sauce
Chili sauce
Preparation
Preheat the oven to 375 degrees. In a medium bowl, soak the bread in the tomato puree. In a large bowl, combine the bread mixture, vegetables, meat, egg and remaining ingredients. Gently mix; place in a casserole and shape into a loaf. Add sufficient water to cover the bottom of the casserole dish. Add the onion slices and crumbled bay leaf. Lightly sprinkle additional flour over the loaf. Bake for 1 hour and 15 minutes, basting every 15 minutes. After the first 15 minutes, the loaf should be slightly set.
In a small bowl, combine the Worchestershire sauce and chili sauce to continue basting. Do not allow the casserole to bake dry. If necessary, add additional water or beef-stock to the casserole dish.
Yields 6 to 8 servings.
